TiE OR: Rethinking the Foodshed: The emergent redesign in our food supply system
Ater Wynne

Sustainably grown and organic food is one of the fastest growing industries in the country. It is about environmental values but it is also about knowledge: rediscovering taste, rediscovering ripeness, rediscovering the connection between the field and the table.

Are these rediscovered values byproducts of a focus on sustainability?

Or is sustainability achievable precisely because these values are in high demand, and require sustainable agriculture and food delivery systems to succeed?

And how can these solutions scale -- is the concept of "distributed scale" an oxymoron or a breakthrough?

Our current food supply chain has become increasingly complex, involving a global network of farmers, packers, shippers, manufacturers & retailers. Your neighborhood grocery store is likely to carry more items from far flung areas of the world than produce that has been grown locally.

Several incidents over the course of last year have brought the increasing complexity and anonymity of our food supply systems to national - and international - attention. The salmonella outbreaks related to spinach & peanuts, the tainted milk from China as well last year’s hike in gasoline prices that had repercussions in the increased food costs -- all fuel a debate about the importance of controlling how and where our food is grown, harvested, processed, stored, and distributed.

Central to this conversation has been the re-emergence of the idea of the food shed.

How do we get the variety in our food and yet stay local? Does local matter and if so why?

Join us for a discussion on this topic on April 21st with David Lively, marketing Director at Organically Grown, largest wholesaler of organic fruits, vegetables and herbs in the Pacific Northwest.

Food Bytes Presents: Talking Trash
Quick Left

Wasted food comes at an enormous financial and environmental cost. In the US, food is the largest single source of waste.

  • 40% of all food never makes it to the table. That's about 20 lbs per person per month at a cost of $165 billion each year.
  • 30% of all food, worth $48 billion, is thrown away annually.
  • Food production accounts for approx. 16% of energy use, 50% of land, and 80% of freshwater consumed.

We're bringing together local experts to discuss how they are fighting wasted food by working with farmers, distributors, and foodservice providers. Learn about the creativity, complexity, and technology involved in their solutions as well as opportunities to continue to address waste in our food systems.

Panelists:

  • Claire Cummings is the Waste Guru at Bon Appétit Management Co which provides full-service restaurant management and operates over 650 cafes. Claire manages the Imperfectly Delicious Produce program which works with farmers, distributors, and chefs to save cosmetically challenged produce from going to waste.
  • Brennan Hogan is a Marketing Manager at LeanPath which provides automated food waste prevention solutions for operators of all sizes. LeanPath was founded in 2004 by a team of Portland-based entrepreneurs and enables clients to cut kitchen food waste by 50% or more and up to 6% on food costs.

Research Club Brunch 32

Brunch 31

September 29, Noon - 2pm

This month through the end of 2013, Brunch has its own apartment, smack in the middle of downtown Portland.

Please Note: Brunch has slimmed down. Talks start at 12:30, and everything finishes by 2pm.

We are doing something a bit different this month. A member of the RC Board has been working with the Lewis and Clark College Venture competition and suggested we have some of the student businesses do a "dress rehearsal" of the final pitch they will present to a panel of judges where they could receive up to $30,000 in funding for their venture.

In keeping with the spirit of the competition, we're going to give you very little info about these businesses. The students will be looking for feedback on their presentation and how well they pitch their venture. Exciting!

Bring some or all of these things for the optimum Brunch Experience

  • A healthy sense of curiosity
  • Food to share
  • Friends! Lots of friends!
  • Your own plates and utensils

StartOut in partnership with Zx Ventures invites you to a panel conversation:

We welcome emerging brands, and LGBTQ founders, as we look to the future of CPG/B2C in the food & beverage industry and the impact of COVID-19 on consumer behavior.

How have consumers changed?

How do we need to change to meet the new needs of our customers?

In this conversation we highlight the experiences and challenges of consumer and community-centric brands and what they are planning for their re-emerging in a post-pandemic world.
